Altitude: 1,960 maslLa Manuela Estate is located in the Caldas region, near the small town of Aranzazu. After the estate's coffee is collected by the workers, it is weighed. The coffee is then transported from the plantation to the wet processing facility in a small truck, which makes several trips in the afternoon.
Upon arrival at the facility, the coffee is emptied into a hopper and subsequently fed into peeling machines. It then moves to a demucilaging machine, which removes the honey. Thanks to new technology, the fermentation process is no longer necessary. Finally, the coffee is either sun-dried or dried in a heating chamber.
When the coffee reaches the mill, it is weighed again, and a sample is taken from each bag. In the quality control lab, the coffee is cupped, analyzed, and its humidity is measured. Once approved, the coffee is stored in bulk.
